This is a great question as not all Olive Oil producers are the same. We only harvest olives during the day to avoid impacting nesting birds in the trees at nighttime. Many farms use mechanical overhead harvesting means, which can injure or kill wildlife. We use manpower or trucks, which vibrates the tree, causing the olives to fall into a net below (this enables any birds to fly off from the tree).
