Our mayo is susceptible to splitting if it's exposed to extremely cold temperatures. That's simply down to nature, nothing else. But it's not all bad news.
Our mayo is made with real food ingredients and doesn't contain any artificial preservatives, thickeners or emulsifiers.
The avocado oil we use is naturally processed to retain all its goodness. A little like olive oil, it can sometimes go solid at very low temperatures.
If this happens, the emulsification may break and the product can separate as a result of temperature fluctuations, usually during colder months or if it's been stored in a fridge that's too cold.
