Each batch is third-party tested to check its key characteristics. The manufacturer is regulated by the IFS, who audit the facility every 3 months. There's also a Spanish state body called SOIVRE that controls the output of olive oil through all Spanish customs, guaranteeing the oil is 100% olive.
