We source our olives from ancient groves, planted in the traditional way with plenty of space between each tree. They're hand harvested with support from tractors, rather than by the intensive industrial methods used on some modern olive farms. These groves are traditional plantations that have been around for hundreds of years, and picking is still done by hand from the tree. This traditional approach keeps the impact on local wildlife to a minimum. Some intensive modern groves harvest at night using large industrial machinery that strips the trees, which can disturb birds and other wildlife roosting there. We don't source our olives from farms like this.
